This Parmigiano hails from the strictly controlled region in Emilio-Romagna, Italy, which is designated as the only region where name protected Parmigiano-Reggiano can be produced. The fantastic cheese is aged for at least 14 months, but are often aged to over 2 years. The enormous flavour of this cheese demands that you try a piece on its own, however it will also be thoroughly enjoyed grated over pasta or into a steaming bowl of soup.
