This 12 month aged cheddar style goat cheese is made by Fromagerie Tournevent, who have been making this cheese for over twenty years, during which time it has garnered a variety of awards at international cheese competitions. This renowned goat’s-milk cheddar uses thermalized milk, a pasteurization process where the milk’s temperature is raised slowly instead of the typical flash-pasteurization processes used. Vegetarian rennet is used to create this rich cheese. Chevre Noir is aged for at least one year, if not longer.

Taste Notes

Le Chèvre Noir is an elegant, crisp cheese that develops a complex flavour dotted with lactose crystals during the aging process. The aroma of Chevre Noir is soft and pleasant, with a distinct touch of goatiness. The texture is firm and silky smooth as well as crunchy due to the crystals. While it has a traditional aged cheddar flavour, Chevre Noir has sweet, nutty, caramel and wine-flavoured finish. Try crumbling Chevre Noir onto your favourite salad or let it be the star of a summery cheese tray!

Pairings

This cheese pair wonderfully ice wines, fortified apple cider, fruity sweet white wines, such as Muscatel and Gewertzaminer or a heavy malt beer.
